Happy Easter

Easter is a beautiful season. This season reminds me of new life and fertility. Hopefully some of that will rub off on us.



Yesterday we celebrated with Brian's immediate family. The came out for a dinner, giving me the perfect opportunity to use our china. We actually hadn't used it at all since we've been married. I wish we could host more gatherings at our house, but it is a bit out-of-the-way.
The china pattern is Faith by Lenox. I love the elegant simplicity. We only had 7 place settings, but made do. I need to put some more pieces on my wish list. We served a roast, au gratin potatoes, roasted asparagus, and carrot cake. Jeff and Jacqueline made a great olive tapenade and Julie introduced us to her specialty -better than sex cake.



Following dinner, we all went to Easter Vigil mass. Brian was one of several cantors. He really did a fantastic job. You'd have never known how nervous he was. The mass is long, but it really is beautiful in the ceremonious aspect. It's wonderful to consider the great religious significance of Easter for Christians around the world. As an adult, I've really become to appreciate the religious focus of the holiday. Whereas Christmas, with the stress of buying presents and so many holiday gatherings, doesn't feel the same.

Today we took Maggie down to Saugatuck and strolled for a bit in the sunlight. She found a lot of untouched snow to romp in. She looks like she's flying - go Underdog!

My very first, made from scratch, carrot cake. It looked and tasted great. The recipe came from my favorite resource, Everyday Food magazine.



Beautiful tulips from Jeff and Jacqueline. We also received red tulips in our Easter basket from Patty and Chuck. I will keep those bulbs to plant in our garden this fall.

Our thanks and appreciation for your beautiful Easter dinner for the family Ang and Bri. You outdid yourselves as far as we're concerned. It was a great break for dad with all the catering to me he's had to pace himself with. Dad and I can't tell you what a blessing it was particularly to have our sons and the girls he and I have wanted for so long all together as a family unit. God is Good! The table, food, desserts just everything was perfect! Love YOU!!

Brian was a fabulous cantor. It's been a long time since we've enjoyed Brian singing in public. And it was wonderful to share a liturgy with Angie!

Hey guys, did you take a picture of you with the books??? As David and Julie posed for theirs and Jeffrey and Jacqueline with theirs, I was late saying to catch the two of you!! Can't wait to see one on the blog!

Angie dinner was absolutely perfect! Everything tasted so wonderful. Thank you again for having us over for Easter. We had so much fun visiting with everyone and spending the holiday at your home. Thank you!

Wow, it looks like your dinner party was a huge success. Great job! The table looks beautiful. Sounds like quite the feast plus getting to hear Brian sing. Wow.

Better Than Sex Cake

1 cup Flour
1 Cup chopped nuts (I used Pecans)
1 Stick butter softened
1 (8oz.) cream cheese
1 Cup confectioners sugar
2 (8oz.) cartons cool whip
3 cups milk
2 (3 1/2 oz. pkg) instant chocolate pudding

~Combine flour, nuts, and butter and mix thoroughly. Press on bottom of greased 9X13 inch pan. Bake at 350 degrees for 20 mins; let cool.

~Combine cream cheese, powdered sugar, and 1 carton of cool whip. Beat until smooth and spread over cooled crust. Combine milk and chocolate pudding. Beat 3 minutes and spread over cream cheese layer. Spread second container of cool whip on top. Keep refrigerated.

(I sprinkled crushed pecans on top)
